My Kyocera Santoku Kyocera Revolution Series Knives, 5-1/2-inch Santoku Knife, White Blade is now dull and sharpening didn't help and I can't afford a Shun so I latched onto this Zayka and I'm pleased. I wanted a longer blade and this provides that, and with a coupon bringing my cost down to $79 I was all in. The 9oz are yes a little weighty if you will be carving for a big dinner but I don't do that much cutting.For small hands the handle is comfortable to me.
I love the seamless transition from the blade to the handle.
The Micarta (some kind of resin bonding amazing process) handle is pretty and feels nice to the touch. Its supposed to lend such benefits as not slippery when wet or greasy.
The "Damascus" pattern on the blade is not as pretty as those costings hundreds more. It looks like more of a stain (and says laminate on the blade) than the beautiful different layers of forging that it is supposed to be. According to WorldKnives, "Because the nickel steel is softer, it helps the blade glide through food. This technique, called "Laminate Damascus", is used to pay homage to Japan's Damascus knife-making heritage within a modern kitchen knife application."
But the Blade is Sharp as I need it to be. I will add pictures of mine. Handsomely boxed it arrived but it is not marked AMERICANA series like the one shown here on Amazon. Any significant difference? If someone could educate me I'd love to know.
